Cinco de Mayo Mango Salsa Recipe
Cinco de Mayo is one big party! As with most holidays, the best thing is the food. I made this salsa to go with my Cinco de Mayo Fish tacos. I call this my Cinco de MANGO salsa. It's perfect with my fish tacos but it's probably just as good with chicken. Anyway, I make a lot of different salsas because I love my electric chopper! Cinco de Mango is definitely a party-worthy salsa.
Instructions:
1. Peel, seed and chop your mango and papaya. Dice your cucumber. Remember, a "dice" is smaller than a "chop"! Chop your red pepper. Dice your Jalapeno and onion.
2. Mix all ingredients together. Add your lime and tequila. Stir gently. Refrigerate until chilled. Salt and pepper to taste before serving. It's best to salt and pepper this salsa after it has had a chance to chill and for the flavors to meld.
3. If you are serving this Cinco de Mango salsa to the "under 21 crowd", substitute balsamic vinegar for the tequila. It's a party, either way! Happy Cinco de Mayo!
